My friend Rabecca is here today to share her Easy Whiskey Cupcakes Recipe. Just in time for St. Patrick’s Day! It gets better you guys; she made Baileys frosting….. from scratch – and she says it is easy!

Everyone jokes about the Irish and their drinking… but what’s a girl to do when her favorite holiday is St. Patricks Day, but she doesn’t love to drink alcohol?

Bake with it of course!

 

Chocolate Whiskey Cupcakes with Baileys Buttercream Frosting.

If you are overly ambitious in the kitchen like I tend to be; when holidays come around I literally loose my mind and think everything should be made from scratch and ten times harder than it needs to be, here is my best Whiskey Chocolate Cupcake Recipe {from scratch}.

However, when I regain my sanity I discovered a much easier way to accomplish a similar culinary achievement:

Quick and Easy Whiskey Chocolate Cupcakes:

1 box devil’s food cake mix

1 cup water

1/3 cup vegetable oil

¼ cup  whiskey

3 eggs

1 teaspoon vanilla

 

 

Baileys Buttercream Frosting:

1 cup butter (2 sticks), at room temperature {I use sweet cream butter}
3 cups powdered sugar
4 Tablespoons Bailey’s Irish Cream
2 teaspoons vanilla extract

Directions:

Once you have mixed all your ingredients together for the cupcakes (by box or from scratch) fill your cupcake molds ¾ of the way full and bake at 350 for 18-22 minutes.  Then with an electric mixer place all your frosting ingredients together and mix thoroughly until creamy and smooth.  I added green food coloring to my frosting to make the cupcakes extra colorful, but you can stick with simple sprinkles or nothing at all… their flavor really does speak for itself!
