Easy Healthy Crust-less Quiche

Today’s Meatless Monday is an easy healthy crust-less quiche that is chopped full of healthy veggies straight from our garden.  This quiche is super easy, uses a lot of fresh veggies and is super budget friendly.  This is a great ‘kid’s in the kitchen’ type recipe.  All our kids love to help harvest the veggies and the big kids are great little helpers in the kitchen.

I love this recipe! The quiche is delicious and it works for breakfast, brunch, lunch, and dinner.  We love to make it for dinner and make a little extra so we can all enjoy it for breakfast the next day.

The kids love this combination of vegetables, but you can always switch it up – we typically chop up half a greyzini zucchini too, but we all decided we needed a tiny break from zucchini for a couple days.

 Easy healthy Crust-less Quiche

Ingredients

Spoonful of coconut oil

6 large eggs

1 cup milk

1 1/2 cups cheese (whatever your preference) – grated

1 white onion – diced

Onion greens – diced

3 – 4 large pieces of chard – bottom stem removed & cut into bite sized pieces

Broccoli Florets & leaves (did you know you could eat the leaves?) – about half a cup

2 Tomatoes – diced

Process

Preheat the oven to 375 degrees

In a skillet saute onion greens and white onions in coconut oil until soft, add in chard and continue to saute for about 5 minutes on low, stirring regularly.

In a bowl whisk together  eggs, milk, and cheese – set aside

Back to the skillet toss in broccoli and continue to cook for a few minutes

Add in tomatoes and turn off heat.  Cover with a lid.  This simply warms up and gently steams the tomatoes, but does not over cook them.

Fold the sauteed veggies into your bowl of eggs, milk, and cheese.

Pour the entire bowl into a glass baking pan.

Bake at 375 degrees for 40 – 45 minutes.  Cheese should be bubbly and a little crispy on the top.

Voila – so easy!

My son who hates tomatoes in any form (seriously, he doesn’t even like ketchup) says “Even these tomatoes are OK.” For real.  That’s a good thing, because we have like five tomato plants and they are all going off.  There are tons of veggies in this quiche but I am pretty sure even someone who is not a big fan of veggies will love it!

This crust-less quiche is super easy, great for a budget, and awesome when you are looking to use up some veggies in garden that is bursting!  Pin it for later and share with a friend!
