Sweet Potato Rolls

These Dinner Rolls are amazingly delicious. They are light and fluffy and oh-so-sweet.  I love the bright orange color of the dough and the nostalgic smell of sweet potato rising in the air as they bake. They are the perfect addition to any of your favorite fall meals!

Here is the best part… I only had ONE dirty dish to wash!  How is this possible you say?  No messy floured surface, no caked over mixing bowls, no messy electric mixing beaters??  Well no, you see this recipe works perfect for your bread machine!!  The only dirty dish was the baking dish the rolls cooked inside… and maybe the mixing dish for my bread machine, but either way, it was awesome!!

  • 3/4 cup milk
  • 1 ¼ cup mashed or pureed cooked sweet potato
  • 3 tablespoons melted butter (not including the extra later on for brushing on top of the rolls)
  • 1 large egg, beaten
  • 4 cups bread flour
  • 4 tablespoons granulated sugar(I have switched out for brown sugar for some added flavor at times)
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast

Put all the ingredients in (according to your machine’s instructions)and set it to Dough Cycle.  That means that you will add the liquid ingredients first; milk melted butter egg and sweet potato.  Then add in the dry ingredients; flour, sugar, salt and yeast.  In about an hour and 45 minutes (depending on your machine) it will beep and your dough will be ready.  Pull it out one little handful at a time and form little beautiful balls and place in a shallow baking dish.  Once your dish is full and the dough is all used up cover them with a towel and set aside in a warm place.  I like to lightly dampen the towel with warm water.  I also turn the microwave on for 2 minutes with nothing in it. Then place the covered baking dish inside to rise for  45 minutes.  The little balls of dough will double in size. When 45 minutes has passed place baking dish in oven at 375 degrees for 20-25 minutes brushing the top with melted butter every 10 minutes or so.
Your rolls will have a beautiful golden top and will be light and fluffy inside.  They are a beautiful orange color with such a unique sweet potato flavor inside.
